Santa Strawberries

Looking for a festive snack that's cute as a button and delicious to boot?
These Santa strawberries are sure to be a favourite, so make extra for the adults too! 🎅

Serves: 4

Ingredients​


125g spreadable light cream cheese
80g light ricotta
2 tsp icing sugar
1 tsp vanilla bean extract
20 strawberries
20 currants, cut in half
1/2 sheet nori

Method​


Step 1​

Process cream cheese, ricotta, sugar and vanilla until smooth. Using a small sharp knife, cut hulls from strawberries to create a flat base. Cut the top third off each strawberry and set aside. Place strawberry bases on a board or platter.

Step 2​

Using a piping bag fitted with a 1cm star-shaped nozzle, pipe cheese mixture onto the strawberry bases. Place reserved strawberry lids on top. Pipe a dot of the cheese mixture on the front and top of each strawberry to make the buttons and pompoms.

Step 3​

Place currants in cheese to create eyes. Slice nori into small strips and place on cheese to create a mouth. Serve.
