Salt and Pepper Squid (or Calamari) is a dish that originates from Southern China, specifically the Guangdong province. It is a popular dish in Australia, New Zealand, and many other countries. The dish is traditionally made with whole squid that has been cut into rings and then coated in a mixture of cornflour and water before being fried in oil.
The combination of salt and pepper enhances the natural flavor of the squid, while the frying process gives it a crispy texture that is simply irresistible. Ingredients:
-500g of squid
-1/2 cup of cornflour
-1/2 cup of water
-1 teaspoon of salt
-1/4 teaspoon of pepper
-1/4 cup of oil for frying
Method:
1. Cut the squid into rings and then set aside.
2. In a bowl, mix together the cornflour, water, salt, and pepper.
3. Heat oil in a wok or frying pan over high heat.
4. Dip the squid rings into the cornflour mixture and then carefully add them to the hot oil.
5. Fry the squid rings for 1-2 minutes or until they are golden brown.
6. Remove from the oil and drain on paper towel.
7. Serve with lemon wedges and/or your favourite dipping sauce.
To make this dish extra special, you could try serving it with a chilli dipping sauce or adding some garlic to the cornflour mixture. Overall, this recipe is easy to follow and the end result is delicious. The squid rings are crispy and full of flavour. It can be stored in an airtight container in the fridge for up to two days.
