Salmon Noodle Stir-Fry

One of the most timeless meals is an old-fashioned Stir Fry – and you know what, we don’t mind making it over and over again! But don’t you think it’s about time for a healthier version of this classic dinner recipe? Ladies and gentlemen, we present to you this speedy and delicious Salmon Noodle Stir-Fry. It’s jam-packed with nutritious ingredients, so you can bet that it will not only satisfy your tastebuds but also do wonders for your health.

Here are the ingredients you need:

1. 270g of soba noodles
2. 400g of skinless salmon fillets, cut into 2cm pieces
3. Two carrots, peeled, cut into long matchsticks
4. 200g snow peas, halved lengthways
5. 175g of chicken and cashew nut stir-fry sauce



Start by boiling the noodles in a large saucepan of boiling water for five minutes or until they are tender. Once they are finished, drain well and set them aside.

Using a greased wok or large frying pan, cook half of the salmon fillets on high heat. Stir-fry the salmon for two to three minutes or until it's golden before popping them into a bowl and setting them aside. Then, repeat with the other half.

Add the carrot and snow peas to the wok or pan. Stir-fry for about a minute or two before returning the salmon fillets with the noodles and stir-fry sauce. Stir-fry for a further few mins or until heated through. Divide the noodle mixture among serving bowls and enjoy!
