Roasted Eggplant with Yoghurt Sauce

Eggplant is versatile, filling enough for a meal or a delicious side dish. Furthermore, eggplant is much more than a bland addition to your plate when cooked correctly.

Made with the right ingredients, it can be a scrumptious & succulent Mediterranean treat for yourself and your loved ones. We're sure that after sampling this Garlicky Roasted Eggplant with Creamy Yoghurt Sauce recipe, you'll never look at eggplant the same way again!



Ingredients:

1 eggplant, cut into half-inch slices

2 cloves of garlic, finely chopped

¼ cup olive oil

1 teaspoon Mediterranean spice blend (or your favourite blend)


For the creamy yoghurt sauce:

1 cup Greek yoghurt (great source of gut-friendly probiotics!)

1 clove garlic, finely chopped

1 tablespoon lemon juice

1 teaspoon honey

1 tablespoon fresh herbs (optional)

Start off by preheating your oven to a nice and warm 200 degrees Celsius.

Next, place the eggplant slices onto a baking sheet and give them sprinkle with some salt. If time allows, let the slices sit for a few minutes to soften them and reduce bitterness.

Mix the garlic, olive oil, and spice blend of choice together in a small bowl.

Brush both sides of the eggplant with the olive oil mixture. Be sure to cover the eggplants well!



Pop the eggplants in the oven for about 30 minutes or until caramelised and crispy, flipping once about halfway through.

And then, the sauce! Mix all ingredients in a small bowl; add salt and pepper to taste.

Serve with a side of brown rice, whole-grain pasta, chopped cucumbers, and tomatoes with a generous helping of the yoghurt sauce for an amazing culinary experience.

Great recipe but you HAVE to salt the eggplant 🍆 and let sit for at least 20 minutes

After you have sliced the eggplant, you need to sprinkle salt over each slice then leave on a tray or plate for 20 minutes. You will then see it draws out liquid , using paper towel wipe each slice . Then it's ready to cook.
By doing this it takes out any bitterness

I will add a recipe for Traditional Greek Mousaka which is the same as lasagne but you are replacing the pasta with eggplant. I will also add a recipe for Bake eggplant ricotta rolls
