Roast Chicken Noodle Soup

Whether you're feeling a little under the weather or you just don't have the energy to whip something up, a warm and comforting bowl of soup will always hit the spot. This Roast Chicken Noodle Soup is packed with flavour even though it only requires six ingredients. Best of all, it’s on the table in just 15 minutes and is sure to warm you from the inside out. So if you have some leftover chooks, then give this tasty dinner idea a shot!

Here are the ingredients you need:

1. A tbsp of olive oil
2. 1kg of Coles Australian Soup Starter Pack, cut into 2cm pieces
3. Two chicken stock cubes
4. 250g of spaghetti, broken into 5cm pieces
5. Half a hot roast chicken, skin and bones removed, meat shredded
6. 6 cups of water


To begin, heat the oil in a large saucepan over medium heat. Add the vegetables and cook until lightly browned. This should take about 2 to 3 minutes. Next, add the stock cubes and 6 cups (1.5L) of water, stirring to combine. Add the pasta and return to a boil.

Once boiling, reduce the heat and simmer for 10 minutes until the vegetables are tender and the pasta is al dente. Add the cooked shredded chicken, simmering until heated through. Before serving, season the soup to taste and voila – you have a delicious Roast Chicken Noodle Soup in minutes. We recommend serving it with bread for a satisfying crunch!
