Ooooh those cheeky Irish (my family line btw) - if the Constable was saying the day after tomorrow is the day before the day before Sunday, he means that this will be Friday, therefore he has identified the day two days ahead of what "today" is, which it is Wednesday.

Thankfully he wasn't counting Camels, but nonetheless a good riddle for "Hump Day" today, to be sure to be sure :)
