REWENA (MAORI BREAD)
This is a recipe some may find interestng from our friends across the water from the land of aotearoa.
REWENA (leavening for Maori Bread)
(A) Starter Plant: From Rewena Paraoa doughtake a tablespoon of dough and put into a ajr
Feed one with 1/2 cup warm unsalted potato water and the next day with 1tsp sugar.
Continue alternate daily feeds.
(B) Original Starter Plant.
2 cups flour
1tsp Sugar
3 slices medium size potato
Boil potatoslices in 1 cup water to mashing consistency cool.
When lukewarm, mix all ingredients together to a fairly firm texture.
Add more warm watter if required. Cover and in a warm place to prove.

2 cups of flour
1 tsp salt
1tsp Baking Soda

Method
Put flour and salt into a bowl, make a well in the centre, put rewena in and sprinkle baking soda over all.
Add more ater if mix is too firm. Mix and knead lightly for about 10 minutes.
