Ginger and Turmeric Aromatic Rice​


Ginger and Turmeric Aromatic Rice is a delicious and healthy side dish that pairs well with almost any main course.

Ingredients​

  • 1 cup white basmati rice
  • 1.5 cups water
  • 1 tablespoon coconut oil (or oil of choice)
  • 2 cloves garlic minced
  • 1 tablespoon ginger peeled and grated
  • 1 teaspoon fresh turmeric peeled and grated*
  • 1 teaspoon sea salt to taste
  • 1 tablespoon fresh lemon juice
  • ½ cup dried cranberries

For serving:​

  • ¼ cup fresh cilantro chopped
  • ¼ cup pine nuts toasted

Instructions​

Combine all ingredients for the rice, except the dried cranberries, in a small pot. Cover the pot and bring the mixture to a full boil. Reduce the heat to a simmer and cook, covered, until the rice has absorbed all the liquid, about 15 minutes, or follow the package instructions if you're using a different type of rice.

A few minutes before the rice finishes cooking, stir in the dried cranberries. This allows them to plump up and infuse more flavour into the rice. Replace the cover and continue cooking until done.

Taste the rice and add more sea salt if desired. Serve with fresh cilantro and pine nuts alongside your favourite main dish.
