Raspberry Muffins

250gr plain flour
1 teaspoon baking powder
1/2 teaspoon bi-carb soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
100ml oil
125ml maple syrup (or honey)
2 eggs
140gr plain yoghurt
2 teaspoons vanilla essence
125gr fresh or frozen raspberries

In a bowl, mix flour, baking powder, bi-carb soda, salt and cinnamon using a whisk.
In another bowl, mix oil, maple syrup (or honey). Add the eggs and beat well, then add yoghurt and vanilla and mix.
Using a wooden spoon, pour wet ingredients into the dry mixture and mix. Fold in raspberries.

Spoon evenly into a 12 muffin pan. Bake 200 fan forced or 220 conventional for 15 - 20 minutes.
