Quick Spicy Prawn Laksa

Preparation Time - 10 minutes

Ingredients
• 100 gm S Ayam Malaysian Laksa paste
• 400 ml can coconut milk
• 250 mls water
• 24 green prawns - peeled, tails intact
• 200 gms dried rice stick noodles
• 120 gms green beans - sliced diagonally
• 80 gms bean sprouts - trimmed
• fresh Thai basil leaves - to serve
• lime wedges - to serve
Method
1. Heat a large non stick saucepan over medium heat. Add laksa paste and cook for 30 seconds or until aromatic. Stir in the coconut milk and water. Simmer for 3 minutes, or until heated through, and well combined. Add prawns and cook for 3 minutes until cooked through.
2. Meanwhile, cook the noodles following packet directions - drain. Microwave beans for 2 minutes - drain
3. Place a nest of noodles in each serving bowl. Ladle laksa mixture around the noodles. Top with beans, beans sprouts and basil. Serve with a lime wedges.

This was absolutely delicious, not spicy at all.
I did think it was a bit watery, so next time I made it using coconut cream and 125 mls of water, at first and add more water if necessary.
