This dish is a traditional Mexican dish typically made with beef but can also be made with chicken or pork. Quick Chilli is the perfect meal for those busy weeknights. It is packed with flavour, easy to make and only requires a few simple ingredients.



Ingredients:

-500g of beef (or chicken, pork)
-1/2 onion
-1 green capsicum
-1 can of diced tomatoes
-1 can of red kidney beans
-1 tsp of chilli powder
-1 tsp of cumin
-1 tsp of garlic powder
-Salt and pepper

Instructions:

1. In a large pot, brown the beef (or chicken, pork) over medium-high heat.

2. Add the onion and green capsicum and cook until softened.

3. Add the diced tomatoes, red kidney beans, chilli powder, cumin, garlic powder, salt and pepper.

4. Stir until well combined and bring to a simmer.

5. Reduce the heat to low and simmer for 30 minutes, or until the beef (or chicken, pork) is cooked through.

6. Serve with rice, tortillas, and/or sour cream.

To make this dish extra special, you could:

-Add some chopped fresh coriander
-Serve it with homemade tortillas
-Add a dollop of sour cream

This dish is so easy to cook and only takes a few minutes. Plus, it is a very healthy dish since it is made with fresh ingredients. The chilli and tomato sauce gives it a kick, while the beans provide a good protein source. While the rice and sour cream help to balance out the flavours
