Quick Chicken Chow Mein

Feeding a family (or yourself) can be overwhelming. Between the trips to the supermarket, the preparation, and the cooking, it’s not always easy to come up with a delicious and nutritious meal. Fortunately, we've unearthed an easy and flavourful Chinese-inspired dish that's ready in just minutes and is sure to leave everyone more than satisfied.

Here are the ingredients you need:

1. 440g pkt shelf-fresh hokkien noodles
2. 1 tbsp peanut oil
3. 500g of chicken mince
4. 1 carrot, cut into matchsticks
5. 1 red capsicum, seeded, finely chopped
6. 2 garlic cloves, crushed
7. 1 tbsp curry powder
8. 1/4 cup (60ml) Coles oyster sauce
9. 2 tbsp Coles salt-reduced soy sauce
10. 1/2 cup (60g) frozen baby peas
11. 1 bunch choy sum, coarsely chopped
12. 1/2 small wombok (Chinese cabbage), coarsely shredded
13. 2 spring onions, thinly sliced


Start by placing the noodles in a heatproof bowl with boiling water. Let it cook for 5 minutes or until the noodles separate. After that, drain it well.

In the meantime, heat some oil in a pan over high heat. Add the chicken and stir-fry, ensuring that you break up any lumps while letting it cook for 3 to 4 minutes. Then, add the carrot, capsicum, and garlic. Cook for another minute or two before adding the curry powder. Add the oyster sauce, soy sauce, and noodles as well as ½ cup (125ml) of water. Cook for a further 2 minutes.

Finally, add the peas, choy sum, wombok, and spring onion. Stir-fry for 1 to 2 mins or until the wombok just wilts. Divide them among serving bowls and enjoy!

That sounds lovely and probably a bit pricey but definitely worth a try. How many servings would you get from it?
 
Looks nice , would not be that expensive , I usually get 6 meals out of that , so that means cooking for 3 days for the two of us .
Half the leftover cabbage and some spring onions you could use to make another few meals like bami goreng (y) :)
