Quick And Easy Pasta With Salmon & Peas

It's easy to get stuck in a cooking rut, making the same old dishes week after week. But with this simple and delicious recipe for pasta with salmon & peas, you can shake things up and enjoy a delicious and healthy meal in no time. This recipe is easy to follow and quick to cook so that you can have a delicious meal on the table in no time. And best of all, it's healthy and packed full of flavour.

Salmon is an excellent source of protein and omega-3 fatty acids, which are essential for a healthy diet. The peas are packed with fibre, vitamins, and minerals, and the whole wheat fusilli provides complex carbs and a good amount of fibre. This dish is also low in fat and calories, making it a great option if you're watching your weight.



Ingredients:

-1 pack of whole wheat fusilli
-1 large shallot, finely chopped
-1 knob of butter
-140g frozen peas
-2 skinless salmon, cut into chunks
-140g low-fat crème fraîche (if not available, you can use sour crème as an alternative)
-1/2 low-salt vegetable stock cube
-A small bunch of chives
-Black pepper (to taste)

Instructions:

1. To make this dish, simply cook the pasta according to the package directions.

2. While the pasta is cooking, melt a knob of butter in a saucepan, and add a finely chopped shallot—Cook for 5 minutes or until softened.

3. Add the peas, salmon, crème fraîche, 50ml water, and vegetable stock cube.

4. Cook for 3-4 minutes, or until the salmon is cooked through. Stir in the chives and some black pepper.

5. Serve in bowls and enjoy!

The wholewheat fusilli pairs perfectly with the creamy sauce, fresh salmon, and peas. The low-fat crème fraîche adds a touch of creaminess, while the chives add a bit of brightness.

To make this dish extra special, you can add a dollop of pesto or a sprinkle of Parmesan cheese on top. Serve it with a side of steamed broccoli or a simple green salad. Add a glass of white wine to complete the meal.
