Quick and easy beef enchiladas

Amp up your weeknight dinner game with these quick beef enchiladas. Flour tortillas are filled with flavourful beef, bean, and cheese mixture, then smothered in enchilada sauce and baked until hot and bubbly. This dish is easy to make and can be on the table in about 30 minutes.

Ingredients:

500g Beef Mince
300g mild chunky tomato salsa
8 white corn tortillas
1 cup grated tasty cheddar
2 tomatoes, finely chopped
1 avocado, stoned, peeled, finely chopped
1/2 cup low-fat sour cream



Instructions:

1. Preheat oven to 200°C.

2. Heat a non-stick frying pan over high heat. Add beef mince. Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned.

3. Add salsa. Cook, stirring, for 2 minutes or until heated through.

4. Spoon one-quarter of the beef mixture over the base of a large baking pan. Dip one tortilla in the remaining mince mixture to soften. Place the tortilla on a working surface. Top with one-eighth of the beef mixture. Roll up to enclose filling. Repeat with the remaining tortillas, mince mixture and cheese.

5. Place the enchiladas, seam-side down, in the prepared pan. Spoon over the tomato sauce. Sprinkle with grated cheese. Bake for 10 minutes or until the cheese is melted and the enchiladas are hot.

6. In a small bowl, combine tomatoes, avocado and sour cream.

7. Serve the enchiladas with avocado salsa.

To make this dish extra special, you could:

-Add some spice to the beef mince by adding a teaspoon of chilli flakes or using a hot salsa instead of a mild one.

-Top the enchiladas with green onions, coriander, or more cheese before serving.
