Pumpkin and tuna pasta bake is a hearty and delicious dish that is perfect for a quick and easy meal. It is usually prepared with a creamy sauce and baked with cheese on top. This dish combines the nutty flavour of roasted pumpkin with the salty bite of tuna to create a flavourful and comforting dish. It’s a great way to get your daily dose of vegetables, protein, and carbs in one meal!
Ingredients:
375g rigatoni pasta
500g pumpkin, seeded, peeled, and chopped into 2cm pieces
425g can tuna chunks, drained
300g sour cream
1 cup (120g) shredded cheddar cheese
Instructions:
1. Cook the rigatoni pasta in a large saucepan for 7 minutes, then add the chopped pumpkin and cook for another 5 minutes or until both are tender. Drain.
2. Preheat your grill to high. Return the pasta mixture to the pan, then add the tuna, sour cream, and half (60g) of the cheddar cheese. Toss to combine. Transfer the mixture to a 2.5L ovenproof dish.
3. Sprinkle the remaining cheddar cheese on top. Place under the grill for 5-7 minutes or until golden brown.
Optional ways to make the dish extra special:
- Add a splash of white wine to the mixture for an extra depth of flavour.
- Top the dish with some crispy prosciutto or bacon for a salty crunch.
- Sprinkle some fresh herbs, such as parsley, oregano, or thyme, over the top of the dish before baking for added flavour.
