Potato , Fetta and Chive Cakes

My family love experiencing different food and I was surprised at how much they loved these.
Hint to save money on herbs try growing the basics even in pots.

Ingredients

500g potatoes
120g fetta cheese
1/2 cup chopped chives
1 egg lightly beaten
1 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
Plain Flour for coating
Black pepper to taste around 1/4 teaspoon

Method

1. Boil potatoes until tender, then place in a large bowl and mash. Add fetta, chives,egg, lemon zest , juice and pepper.

2. Mix to combine then cover and refrigerate for at least 15 minutes or until firmer enough to handle.

3. Shape teaspoonfuls of mixture into small balls ,then flatten slightly. Dip into flour and shake off excess.

4. Heat oil in frypan over medium heat and fry fritters for a few minutes on each side until golden. Place on plate libes wuth paper towel and serve immediately.

Goes well as a side but I love these served with a salad

looks great but remember "everything tastes better with bacon"
