Pork with Roasted Plums

Here are the ingredients you need:

1. 1.2 kilograms of easy carve pork leg
2. Three teaspoons of olive oil
3. A teaspoon of sea salt
4. 230 grams of eschalots, peeled
5. 550 grams of potatoes, halved
6. 460 grams of black diamond plums, stones removed, quartered
7. Steamed green beans, to serve


Kick things off by preheating the oven to 220 or 200 degrees Celsius, fan-forced. Place the pork leg in a large roasting pan before drizzling it with oil. Then, sprinkle with salt and pepper, ensuring that the entire piece is coated evenly. Roast for about 25 minutes or until the pork skin is golden and crackled.

Reduce the temperature to 200 or 80 degrees Celsius, fan-forced. Add the eschalots and potatoes to the pan before gently stirring to coat the ingredients in the pork fat juice. Roast for 40 minutes or until the potatoes are almost tender. Add the plums. Roast for another 20 minutes or until the juices run clear when the thickest part of the pork is pierced with a skewer and the plums are tender.

Cover the pork and let it rest for 10 minutes. Cut into slices and serve with the plums, potatoes, eschalots, and beans before drizzling each pork slice with the pan juices.
