Pork Stroganoff

But, in our busy lives, it's often a challenge to find something easy to prepare, tastes excellent, and fits any occasion. Well, look no further! We have the perfect recipe for you to try out: an easy and mouth-watering pork stroganoff that is truly a crowd-pleaser.

Ingredients:
200g easy cook brown rice
1 tablespoon olive oil
600g pork loin steaks, cubed (or pork fillet)
Small knob of butter
1 onion, diced
100g chestnut mushrooms, sliced
2 cloves garlic, grated or crushed
3 teaspoons smoked paprika
Salt and black pepper, to taste
150ml sour cream (or crème fraiche if you prefer)
2 tablespoons parsley, chopped (plus extra for garnish)
Broccoli or your choice of green veggies, to serve
Instructions:
1. Start by cooking the brown rice. Place it in a pan with 400ml boiling water and a pinch of salt. Bring it to a boil, then cover with a lid and turn the heat down low. Let it simmer for 15 minutes or until cooked to your preference.
2. Heat the olive oil in a large frying pan for a minute. Add the cubed pork and cook over high heat for 5 minutes, stirring frequently to ensure even browning. When cooked, transfer the pork onto a plate.
3. Lower the heat and then add a small knob of butter to the same pan and allow it to melt. Once melted, add the onions and mushrooms, cooking for approximately until lightly browned. These ingredients add a wonderful depth of flavour to the dish!
4. Prepare the green vegetables of your choice to serve alongside the stroganoff.
5. Gently mix the garlic, paprika, salt, and pepper into the pan with onions and mushrooms. Add the pork back to the pan and continue to cook on low heat for another three minutes, or until the pork is cooked through.
6. Finally, stir in the sour cream and heat gently until it just begins to bubble (don't let it boil!). Turn off the heat and sprinkle in the chopped parsley as a finishing touch. Serve your mouth-watering pork stroganoff over brown rice and veggies, garnishing with a sprinkle of parsley. –

- Be aware that different brands of brown rice may take longer to cook, so do always check the packet instructions.
- This dish is not suitable for freezing (although you can freeze it before adding the sour cream, in which case you should add the sour cream during reheating, after defrosting).
