Pesto Salmon with Rice Salad

Making a delicious and easy meal doesn’t have to be complicated - and that’s especially true for this five-ingredient Pesto Salmon and Rice Salad. This recipe is a surefire way to spice up your usual array of dinner ideas for the week. It’s packed with protein, grains, and greens, so you can bet that it’s going to do wonders for your health and your tastebuds!
Here are the ingredients you need:
1. Four Pieces of Salmon
2. 180 grams of basil pesto
3. 500 grams of microwavable rice
4. Two carrots, peeled, cut into long matchsticks
5. 200 grams of snow peas, trimmed, thinly sliced lengthways
Start by preheating the grill to medium and lining a baking tray with foil. Then, lightly spray the foil with olive oil spray, and place the salmon skin-side down onto the tray. Spread each piece of salmon with a tablespoon of pesto before cooking them under the grill for 5 minutes, or until they’re just cooked through.
While the salmon is cooking, transfer the cooked rice to a large heatproof bowl. Pop in the carrots, snow peas and half the remaining pesto in the bowl, give it a good toss and divide the mixture among four serving plates.
Top each plate with cooked salmon and drizzle over the remaining pesto. Voila! Serve up this fabulous dish for dinner and enjoy.
