Peach n Blueberry Cobbler

Ingredients​

  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornflour
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 2 cups sliced peeled fresh peaches or canned
  • 1 cup blueberries
  • topping:
  • 1 cup plain flour
  • 1/4 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, softened

Directions​

  1. Preheat oven to 175 C or 155 fan-forced
  2. In a saucepan, combine the first 5 ingredients. Bring to a boil. Cook and stir until thickened, 1-2 minutes; stir in fruit. Pour into a 8 inch baking dish.
  3. For topping, in a small bowl, combine flour, sugar, baking powder and salt. Stir in milk and butter. Spread over fruit mixture. Bake until topping is golden brown and filling is bubbly, 45-50 minutes. Serve warm.

Its the oldest desert in the book. Mum made it often, and we often had it at Grandad`s. I`m 74. I made it often for the family,. It is in most cookery books and certainly most Kiwi`s will have it in the Edmonds Cook Book.
