Pea and Bacon Risotto Recipe

I'm not usually a fan of risottos, but this one is an exception! Rice and peas are a classic combination; add some bacon, and it tastes divine! This recipe is so easy to make and can be your ultimate comfort food. And you'll have this dish ready in no time. So, without further ado, let's get cooking!
Ingredients:
1 tablespoon olive oil
1 onion, diced
1 cup Arborio rice
3 cups chicken broth
1 cup frozen peas
4 strips bacon, diced
1/2 cup grated Parmesan cheese
Salt and pepper
Instructions:
1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Add the bacon and fry for a further 5 minutes until it starts to crisp.
3. Add the rice and cook, stirring, for 2 minutes.
4. Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
5. Add the peas and cook for 5 minutes.
6. Stir in the Parmesan cheese and season with salt and pepper to taste. Serve immediately.
