Patty cakes

We in Australia also called them butterfly cakes. They were always on the table at any party, school function, fetes, etc etc. always tasted so yummy, never lasted long as were very popular. Mum used to sometimes make them as a treat for us kids. I remember helping mum beat the cream with a hand held beater as we had no electricity in our house. These days not many people make them, bit fiddly for the time poor to worry about. Occasionally can buy from our local bakery, Woolies or Coles. Don’t taste as nice as the home made ones used to.
