Oven-roasted Garlic and Lime Prawns

Here are the ingredients you need:

1. Two kilograms of large green king prawns
2. Four garlic cloves, thinly sliced
3. Two limes, sliced
4. Half a cup of roughly chopped fresh flat-leaf parsley leaves
5. One-third a cup of extra virgin olive oil
6. A quarter cup of roughly chopped fresh dill
7. Half a cup of aioli
8. Crusty bread, to serve
9. Lime wedges, to serve


Start by preheating your oven to 220 degrees Celsius. Then, line a large metal roasting pan with baking paper. After that, rinse the prawns under cold running water and drain well. Transfer them to a large bowl and add the garlic, lime slices, parsley, and oil. Toss the ingredients well to coat the prawns thoroughly before placing them on the prepared pan and seasoning them with salt and pepper.

Roast the prawns for 15 to 20 minutes, tossing them halfway through the cooking process or until the prawns have turned pink. Sprinkle with the dill and remaining parsley before serving the prawns with the pan juices, aioli, crusty bread, and lime wedges.

I removed the aoli (which I detest) and the dish was excellent.
