One-pot winter chicken

This delightful dish is a true winter winner, offering the ultimate convenience of a one-pot tray bake. Spend just 15 minutes on simple chopping, then let the oven work its magic while you cosy up and enjoy the comforting aromas wafting through your home. So, gather your ingredients, preheat your oven, and get ready to create a hearty, flavourful feast.

Ingredients:

1 packet of vegetables for soup (see note)

2 tbsp olive oil

4 chicken thigh cutlets, excess fat trimmed, scored

4 chicken drumsticks, scored

3 large sprigs of fresh rosemary, plus extra, to serve

300ml Bulla Cooking Cream

40g (1/2 cup) finely grated parmesan

Crusty bread slices to serve



Instructions:

1. Preheat your oven to 220C/200C fan-forced. Peel the onion and cut it in half. Finely chop one half and cut the other half into wedges.

2. Finely chop the celery and garlic, then place them in a large roasting dish with the chopped onion. Drizzle with 1 tablespoon of the oil and cook for 5 minutes.

3. Meanwhile, peel the potato, carrot, parsnip, and swede. Chop them into 3cm pieces.

4. Place the chicken on top of the celery mixture in the roasting dish. Surround the chicken with the onion wedges, potato, carrot, parsnip, swede, and rosemary. Roast for 45 minutes or until the chicken and vegetables are crisp.

5. Combine the cream and parmesan in a jug, then drizzle over the vegetables and around the chicken. Continue cooking for 5 minutes or until the cream starts bubbling.

6. Sprinkle some extra rosemary over the bake. Serve with crusty bread for a delightful meal.

To make the dish extra special:

- Add crunchy croutons to the dish for a delicious crunch

- Use honey and garlic to create a sticky glaze for your chicken

- Add a pinch of chilli flakes to give the dish a gentle kick of heat

Notes: Packets of soup veggies are available in supermarkets' fresh fruit and vegetable section in autumn and winter. The packet used in this dish contains 1 brown onion, 1/2 celery stick, 2 garlic cloves, 2 potatoes, 2 carrots, 1 parsnip and 1/2 swede.
