One-Pot Vegetarian Pasta

It's no secret that pasta is an all-time favourite among many, regardless of age! A bowl of steaming, fragrant spaghetti is guaranteed to transport us to our happy place in a split second, and it's something that we can always turn to when we don't know what to eat.
But here at the Seniors Discount Club, we're always scouting for creative and delectable recipes to make mealtime as exciting and enjoyable as possible for our community.
Today, we'd like to share an easy vegetarian spaghetti dish that can be cooked in one pot! Not only is it the perfect way to get a tasty yet nutritious meal going in a jiffy, but it also minimises the time spent dealing with tedious cleanup afterwards – now that's a win-win!
For this one-pot vegetarian pasta,all you'll need are the following ingredients:
2 teaspoons extra-virgin olive oil
½ medium brown onion, chopped
1 (226g) package of button mushrooms, sliced
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon chilli flakes (optional)
2 cups low-sodium vegetable broth/stock
1 (411g) can diced tomatoes
283g thin spaghetti noodles (use whole wheat for a healthier meal!)
3 cups fresh spinach or baby spinach
¼ cup grated Parmesan cheese, plus extra for serving
¼ cup fresh chopped basil or parsley (optional)
If you have all you need to cook this recipe, get started!
In a pot, heat olive oil over medium heat. Saute the onions and mushrooms for about 5 minutes until they are tender, and their liquid mostly evaporates.
Next, add the garlic and season with salt, pepper, and chilli flakes. Stir and cook for another 30 seconds.
Add the canned tomatoes and vegetable broth and raise the heat to high. Bring the mixture to a boil.
Get the spaghetti noodles and put them into the boiling mix. Stir until they wilt and fit in the pot. Cover the pot, reduce heat to medium-low and cook for 5 minutes.
And then, remove the lid, add fresh spinach, and stir to get the spinach mixed in and wilted.
Turn off the heat and let the spaghetti sit, covered, for a few minutes. Stir in Parmesan cheese. Don't add too much, as Parmesan can easily make a dish too salty. Taste and adjust seasonings.
Finally, if desired, serve with fresh basil or parsley and extra Parmesan cheese.
