One-pot Sausage Stew

There’s nothing like snuggling up in front of the telly with a hot bowl of stew. It’s comforting, tasty, and nutritious! But if you fancy trying something a little different from the regular, old-fashioned beef stew, then you need to give this version a go. This One-pot Sausage Stew is perfect for days when you don’t have much time for cooking. It boasts a mix of beef chipolata sausages, beans, tomatoes, and BBQ sauce that will tantalise your taste buds and keep you in high spirits.

Here are the ingredients you need:

1. A tbsp of olive oil
2. 500g of extra-lean beef chipolata sausages
3. A medium brown onion, halved, sliced
4. 2 garlic cloves, crushed
5. A can of Coles Cannellini Beans, drained, rinsed
6. 800g of canned diced tomatoes
7. A quarter cup of barbecue sauce
8. A tbsp of brown sugar
9. Chopped fresh flat-leaf parsley leaves, to serve
10. Crusty bread, to serve


To begin, heat half of the oil in a large, heavy-based saucepan over medium-high heat. Then, cook the sausages in batches, turning often, until they are browned all over – this should take 5-6 minutes. Once they are done, transfer them to a plate and set them aside.

Meanwhile, take the remaining oil and heat it in the same pan. Once it’s hot, add the onion and garlic and stir continuously for the next 5 to 6 minutes or until the onion has softened. Add the beans, tomatoes, barbecue sauce, and sugar to the pan. Stir the ingredients together well.

Return the sausages back to the pan, cover, and bring to a boil over medium-low heat. After that, you can let the stew simmer uncovered for 25 minutes or until the sausages are cooked through and the sauce has thickened. To serve, top the stew with some fresh flat-leaf parsley and enjoy with a side of warm crusty bread.
