One-pot Honey Barbecue Beef Brisket

Beef barbecue brisket makes for a hearty and delicious comfort meal… But it can take hours to achieve a perfectly tender and succulent result. Luckily, this recipe takes all of the hard work out of whipping one up, leaving you with not only a delicious and mouth-watering meal but a convenient one that can be cooked in just a single pot too. It’s easier to make and there will be less mess to clean up afterwards. Now, that’s what you call a win-win!

Here are the ingredients you need:

1. A tablespoon of vegetable oil
2. A piece of beef brisket (about 1.5 kilograms)
3. Two and two-thirds cups of beef stock
4. One-third a cup of dark brown sugar
5. 410 grams of canned tomato puree
6. A tablespoon of Worcestershire sauce
7. A tablespoon of wholegrain mustard
8. Two tablespoons of honey
9. Two tablespoons of treacle
10. Three tablespoons of onion powder
11. Two teaspoons of dried thyme
12. Three garlic cloves, crushed
13. 600 grams of baby potatoes
14. 1 bunch of dutch baby carrots, trimmed, scrubbed
15. 100 grams of green beans, trimmed
16. Fresh thyme sprigs, to garnish

Start by preheating your oven to 180 or 160 degrees Celsius, fan-forced. Then in a large, heavy-bottomed pot or casserole dish, add about a tablespoon of vegetable oil and heat it over medium-high heat. Season your beef with a bit of salt and pepper and add it to the hot oil. Let it cook for about 5 minutes on each side or until browned.

Add the beef stock, sugar, tomato puree, sauce, mustard, honey, treacle, onion powder, dried thyme and garlic in a large jug before transferring everything to the pot. Cover and then bring the mixture to a simmer. Transfer the pot to the oven and bake for about 3 hours, flipping the beef halfway through.

Arrange the potatoes and carrots around the beef in the dish. Bake, covered, for 1 more hour or until the vegetables are tender.

Add beans to the dish and cook for a further 10 minutes. Top it all off with some thyme sprigs.

We’re sure that you’ll love the delicious combination of honey, barbecue sauce and beef stock that gives this brisket a unique flavour. Plus, the aroma of this dish cooking will make it feel like you’re eating in a restaurant!

With a little bit of thought nothing goes too waste, I remember the time that e were told that Bubble and Squeak had to be made with fresh vegetables I thought at the time how bloody inane not realising how things would turn out as they have in this day and age, I truly despair if we had to go back to the time of want!!

Bubble and squeak used to be part of Saturday when I was a kid. Mum would feed us all week and then on Saturday it was dad's turn cook. Out would come all the weeks leftovers plus eggs and, if we were lucky, sausages or boiled bacon. He would set to with the frypan and we would have a great big fry-up of everything, different every week because of the leftovers but those meals were memorable! :)
