One-pot healthy Mexican beef mince

Spice up your weeknight dinner with this healthy Mexican beef mince. Packed full of flavour, this one-pot wonder is sure to become a family favourite. The best part? It can be on the table in just 35 minutes! This dish combines flavoursome beef mince with capsicums, avocadoes, and a variety of spices to create a tasty Mexican-inspired meal. Ingredients:
500g lean beef mince
250g packet of 2-minute brown and wild rice blend
2 tsp extra virgin olive oil
1 red onion, halved, sliced
1 red capsicum, chopped
1 green capsicum, chopped
2 garlic cloves, crushed
2 tsp smoked paprika
2 tsp dried oregano
1 tsp ground cumin
2 tbsp no-added-salt tomato paste
1 cup salt-reduced beef stock
Light sour cream to serve
chopped avocado to serve
Fresh coriander sprigs to serve
Sliced red chilli to serve
Lime halves to serve
Instructions:
1. Preheat a large frying pan over medium-high heat. Add the onion and capsicum and cook for 5 minutes or starting to brown.
2. Add the garlic, paprika, oregano, and cumin and cook for 30 seconds or until fragrant.
3. Add the beef and cook for 6-8 minutes or until browned.
4. Add the tomato paste, beef stock, and 1/2 cup of water and bring to a simmer. Stir in the rice and reduce heat to low. Cook uncovered for 8-10 minutes, or the liquid has been absorbed, and the rice is cooked.
5. Remove from heat and stir through the avocado. Top with sour cream, coriander, and chilli. Serve with lime wedges. Enjoy
