250g shredded cooked skinless chicken breast

175g penne pasta
250g cherry tomatoes, halved
200g broccoli, cut into small florets
100g Chopped Kale
1 zucchini, thinly sliced into rounds
20g (1/4 cup) finely grated parmesan
Instructions:
1. Heat the olive oil in a large non-stick saucepan over medium heat. Add the leek and cook for 5 minutes or until softened.
2. Add the garlic and lemon rind, then cook for 1 minute or until aromatic.
3. Add the pasta and 2 cups of water. Bring to a boil, reduce the heat, and simmer for 7 minutes, stirring occasionally.
4. Add the cherry tomatoes and broccoli to the pan and stir to combine. Cook for 5 minutes or until the liquid has evaporated, the pasta is al dente, and the broccoli is just tender.
5. Stir in the shredded chicken, kale, and zucchini. Cook until heated through and the kale is wilted.
6. Serve the pasta and top it with freshly grated Parmesan cheese.
