One-pot Cajun Chicken and Rice

Many of us worry about the effort it takes to cook something new–or any meal for that matter–after a long and tiring day. But you’re in luck as this easy One-pot Cajun Chicken and Rice recipe only requires minimal effort and a surprisingly short preparation time. Plus, it ticks all the boxes! It's full of bold flavours, budget-friendly, and relatively healthy too! So if it’s a comforting, home-style meal you’re after, this dinner idea will certainly deliver.

Here are the ingredients you need:

1. Two tbsp of extra virgin olive oil
2. Four chicken thigh cutlets (skin on)
3. Two tbsp of cajun seasoning
4. A brown onion, thinly sliced
5. A cup of basmati rice
6. Three garlic cloves, crushed
7. A jar of roasted red pepper strips, drained
8. One chicken stock cube, crumbled
9. A jar of pitted Sicilian olives, drained, halved
10. Two tbsp of finely chopped fresh flat-leaf parsley leaves
11. Lemon wedges to serve


To make this dreamy one-pot dish, start by heating half of the olive oil in a large, deep frying pan over medium-high heat. Then, rub your chicken thighs with 1 1/2 tablespoons of the seasoning. Cook for 7 to 8 minutes, frequently turning until the chicken is golden and almost cooked through. Transfer them to a plate and cover to keep warm.

In the same pan, add the remaining oil and the onion. Cook for 4 minutes or until the onion has softened. Then, add the rice, garlic and remaining seasoning. Cook for a few more minutes or until fragrant. Add 2 cups of water, capsicum, and stock before bringing them to a boil. Reduce the heat to low. Top with the chicken and cover. Cook for 15 minutes or until the rice is tender and the chicken is cooked through.

Finally, sprinkle the pilaf with olives, parsley and a few lemon wedges. Serve and enjoy!
