One Pan Tandoori Chicken

Another one pan meal.
When I was working I would make alot of one pan dishes.
I would prepare it in the morning then hubby would pop it in the oven 30 minutes before I arrived home.

Prep: 20 min. + marinating Bake: 45min.

Ingredients​

  • 1 cup plain Greek yogurt
  • 3 tablespoons tandoori masala seasoning ( woolworths or coles)
  • 1/8 to 1/4 teaspoon crushed red pepper flakes, optional
  • 8 bone-in skinless chicken thighs fillets
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch wedges
  • 1 tablespoon olive oil
  • 16 cherry tomatoes
  • Lemon slices
  • Optional: Minced fresh parsley and naan flatbreads ( I have added previously an easy nann bread recipe)

Directions​

1. In a large bowl, whisk yogurt, tandoori seasoning and, if desired, pepper flakes until blended. Add chicken and turn to coat. Cover and refrigerate 6-8 hours, turning occasionally.

2. Preheat oven to 190°C or 1700°C fan-forced Drain chicken, discarding marinade in bowl. Place chicken in a greased 35cm baking pan. Add sweet potatoes; drizzle with oil.
Cover with foil Bake 30 minutes.

3. Remove foil , Add tomatoes and lemon slices. Bake further 15 minutes Uncovered
