One-pan chicken and pea pasta

If you're a fan of delicious and easy-to-make pasta dishes, you're in for a treat with this one-pan chicken and pea pasta recipe! This dish is perfect for those busy weeknights when you don't have much time to spend in the kitchen but still want something that's hearty and full of flavour. Ingredients:
1 tbsp olive oil
8 small chicken drumsticks
1 brown onion, thinly sliced
2 garlic cloves, crushed
1 1/2 cups (300g) pasta of your choice
400g can diced tomatoes
1 tsp dried oregano
2 chicken stock cubes, crumbled
3/4 cup (90g) frozen peas
1/4 cup flat-leaf parsley leaves
Instructions:
1. Heat oil in a deep frying pan over medium-high heat. Add chicken and cook, turning for 8 minutes or until browned. Transfer to a heatproof bowl.
2. Using the same pan, add the onion and cook, stirring for 4 minutes, until the onion starts to brown. Add the garlic and cook for 30 seconds or until fragrant. Then add the tomato, oregano, stock cubes, and 2 1/4 cups (560ml) of water. Bring to a simmer.
3. Add the pasta to the pan and return the chicken to it as well. Reduce the heat to low, partially cover the pan and let the mixture cook for approximately 25 minutes or until the chicken is cooked through and the pasta is tender. Stir in the peas and cook everything covered for an additional 5 minutes.
4. Sprinkle with parsley before serving.
Optional Extras:
- For an extra flavour boost, add some diced red capsicum to the pan when adding the onion.
- For a spicier version, add some chilli flakes to the pan when you add the garlic.
- To make this dish extra creamy, stir in some grated parmesan cheese before serving.
