One Delicious Biscuit with different fillings

I love baking and one favourite thing I love to do is make and fill up the bikkey jar.

These also make beautiful gifts. Buy a glass jar from the bargain store, fill will these beautiful biscuits and wrap in cello paper and tie with a bow.

Makes 50

Ingredients

125g butter, cubed
1/2 cup caster sugar
1 egg
1/4 teaspoon vanilla essence
1 cup plain flour
1 cup self-raising flour.

Method

1. Preheat oven 160°C or 150°C fan-forced. Line to baking trays with baking paper.
Beat together the butter and sugar until creamy. Add the egg and vanilla and beat well. Fold in the sifted flours to form a soft dough.

2. Turn the dough out onto a sheet of baking paper and cover with another sheet. Roll out to 5mm (1/4in) thick.
Using cookie cutters,cut out desired shapes and place on trays.

3. Bake in oven for 10 to 15 minutes, or until lightly golden.
Cool on wire rack.

Using one of the fillings below spread and sandwich biscuits together.

Store in an airtight container.

Caramel Filling

In a small saucepan add butter,1/2 cup brown sugar and 1/2 cup condensed milk then bring to the boil. Boil for 1 minute or until mixture thickens.
Cool then use on biscuits.

Lime Butter Filling

Beat 60g of softened butter and 1 cup of icing sugar until smooth. Add the finely grated rind if 1 lime and 1 to 2 teaspoons of lime juice. Beat until the filling is spreadable.

Orange Cheese Filling

Beat 3/4 cup of cream cheese with 1/4 cup sifted icing sugar. Add finely grated rind of one orange and beat until creamy

Marshmallow Filling

Put biscuits on a plate and place one Marshmallow on top of each biscuit. Cook for 10 seconds in the microwave, then sandwich together with another biscuit immediately..
Alternatively, lay each biscuit on a baking tray,top each with a Marshmallow and bake in preheated 180°C for 1 minute

Vanilla Icing

Mix 1 1/4 cups of sifted icing sugar with 1 tablespoon softened butter,1/2 teaspoon vanilla essence and 2 tablespoons of boiling water. Use to sandwich biscuits together or just just on the top of a single biscuit

Chocolate Fleck Icing

Make the vanilla icing above and gently mix in 2 tablespoons grated dark chocolate

Passionfruit Glace Icing

Mix 1 1/4 cups sifted icing sugar with 2 tablespoons Passionfruit pulp in a heatproof bowl. Stir over simmering water until smooth and glossy
