This indulgent baked custard is made with eggs, cream, a touch of maple syrup. Sprinkle it with nutmeg and bake in the oven, and you'll have a lower sugar dessert reminiscent of the simple flavours of yester year.

Ingredients
- 3 eggs
- 1 egg yolk
- 40ml maple syrup
- 500ml cream
- 1 tsp vanilla bean paste
- Nutmeg, to sprinkle or cinnamon
Method
- Preheat oven to 150°C or 130°C fan-forced
- . Gently whisk eggs, egg yolk, maple syrup and vanilla bean paste in a bowl until well-combined. Ensure it's not too frothy.
- Add cream and gently whisk until the egg mixture has been incorporated into the cream.
- Using a sieve, strain the mixture into a bowl and sprinkle with nutmeg to taste. Bake in a water bath for 40 minutes or until the custard is no longer wobbly. Serve warm with stewed fruit. If you prefer a cooler custard, leave overnight in the refrigerator and serve the next day.
