Nigerian Egg Fried Rice

Nigerian Egg Fried Rice is the perfect meal to make if you're looking for a quick and easy recipe. Made with only a few ingredients, this dish comes together in less than 30 minutes!

Ingredients:

Boiled white rice

1 egg

1 stock cube

½ onions, chopped

¼ cup Olive oil

Salt and pepper to taste

Thyme



Instructions:

1. Whisk together an egg and the stock cube in a bowl.

2. Combine thyme, onions, pepper and salt, and mix well.

3. Heat oil in a frying pan over medium heat. Add the onion mixture and cook until slightly softened.

4. Add the rice and mix well. Cook for another 3-5 minutes, until the rice is heated through.

5. Add the egg mixture and stirring frequently until the eggs are cooked to your liking.

6. Serve hot, with additional salt and pepper to taste.

Optional ways to make the dish extra special:

1. Add a protein of your choice (chicken, shrimp, beef, etc.) for a heartier meal.

2. Mix in some veggies (peas, carrots, corn, etc.) for extra flavour and nutrition.

3. For a more robust flavour, add some chopped bacon or sausage

4. Top with green onions or fresh herbs for a pop of colour and flavour.

In recent times I have changed from rice to veggie rice. The one I buy most often is the carrot, cauli and broccoli mix. It's rated 5 health stars on the packet, adds a pop of colour to my dishes and only takes about 3 minutes or so in the microwave. Add to that I've changed from mostly meat dishes to substituting pulses. today for instance I had chick pea and coconut dahl curry with veggie rice, both filling and nutritious.
