Jackie Hartlaub, who goes by the handle Low Carb State of Mind online, recently posted a video demonstrating how to put together her Greek salad-in-a-jar recipe that doesn't go soggy before you eat it.

For the dressing
  • Olive oil
  • Red wine vinegar
  • Dijon mustard
  • Lemon juice
  • Dried oregano
  • Minced garlic
  • Salt
  • Pepper
For the salad:
  • Cherry tomatoes, chopped
  • Cucumbers, sliced
  • Cooked chicken breast
  • Red onion, chopped
  • Kalamata olives
  • Lettuce, chopped
  • Feta cheese

And here's how to make it:

First, start by making the salad dressing. Put all of the ingredients in a bowl and stir them together until they are thoroughly combined.

According to Jane, the best way to determine the quantities of the ingredients for the dressing is to "measure with your heart" and simply adjust each amount according to your own unique preferences.

After you have finished making the salad dressing, transfer it to an empty mason jar, and then start putting together the salad.

First, incorporate the chopped cherry tomatoes into the salad so that they can soak up the dressing. Next, add the cucumbers, chicken breast, red onion, Kalamata olives, lettuce, and feta cheese.

Everything should be cut into fairly small bite-sized pieces so that it can all fit inside the jar. This will make it much simpler to store the entire salad jar in the refrigerator.

After the salad has had time to chill and become fresh in the fridge, all you need to do is empty the jar onto a plate, and ta-da! You now have a simple salad that can be eaten at any time of day.
