Nans Recipes simple and good

I was going through my grandmother's recipe book and found a few I wanted to share.
These are ones that I used to make when I started cooking , ones my nan taught me.
These recipes are old Australian recipes and I would say either from Ireland or England

I did have to convert most measurements

Bread Pudding

This was one she made in a sunday but when I cooked it I did it any day of the week

Ingredients
6 slices of bread preferably a couple of days old
3 eggs separated
3 cups full cream milk
1/2 cup sugar
pinch of salt
1 teaspoon of vanilla essence
Jam of choice

Method
1 . Butter bread then spread thin later of jam on each slice. Then arrange in baking dish

2. Beat egg yolks , add milk and whisk. Add the sugar, salt, and vanilla and whisk together

3. Pour over bread.

4. Using a larger baking dish fill with hot water until it comes around half way up Then place baking dish with bread in it into the dish with water

5. Bake in moderate oven 170 deg until custard is set , around 40 minutes.

6. Beat egg whites and add 3 tablespoons of sugar. Beat until thick and spread over bread/ custard mixture.
7. Return to a slow oven to brown . About 15 min

I will stop at step 5 and eat it as is. My grandmother added the egg white top for something different


VANILLA ICE- CREAM

INGREDIENTS

1 cup condensed milk
1 1/2 teaspoon vanilla essence
3/4 cup water
1 cup thickened cream
pinch salt
METHOD

1. Mix milk with water, add vanillaabd salt.
2 . Whip cream until it is thick and stiff.
3. Fold into mixture.
4. Pour into a container or Pudding tin and cover.
5.place in freezer for 3 to 4 hours

If you want strawberry ice cream replace vanilla either 1 1/2 cups of crushed strawberries.

RICE PUDDING

Ingredients

4 Cups milk
1/4 cup white rice
1/2 teaspoon salt
1/4 cup sugar
Nutmeg

METHOD

1. Wash rice , add to bowl with all other ingredients.

2. Pour into a buttered baking dish .

3. Bake 2 to 2 1/2 hours in a very slow preheated oven 110 deg C . Stirring 2 to 3 times in the first hour just to break the crust that may form.

When cooked you can add a few sultanas or raisins. Chill
