My Quick n Easy Apricot Chicken

This is my recipe that is very quick and extremely easy yet very tasty.
I use thigh fillets skin off as they don't dry out. Although you can use any cut of chicken eg drumsticks, chicken breast but skin on.
I serve this over steamed rice and steamed beans n broccoli

Ingredients:
Ingredients
- 6 chicken thighs skin off
- 90g French onion soup mix
- 840g apricot nectar
- 1 cup plain flour to coat
Method
- Using non-stick cooking spray to coat a baking or casserole dish.
- Coat the chicken thigh fillets ( or your chicken choice) in flour and place in the dish.
- In a large jug, combine the soup packets and apricot nectar, mix well, then pour over chicken.
- Cover and bake at 180C for no longer than 90 minutes. I place it on the middle rack
Serve on top of steamed rice and serve with your favourite vegetables. I serve with green beans n broccoli
