Moroccan-style chickpea soup

Moroccan-style chickpea soup is a hearty and filling soup that is perfect for a winter meal. It is traditionally made with a combination of chickpeas, tomatoes, onions, garlic, and spices. The soup is usually served with a dollop of yoghurt or sour cream and a slice of bread on the side.
This dish is packed with nutrients and fibre. Chickpeas are a great source of protein and also contain iron, folate, and manganese. At the same time, tomatoes are an excellent source of vitamins A and C and lycopene, a powerful antioxidant.
Ingredients:
-1 cup (250 grams) chickpeas, rinsed and drained
-1 onion, chopped
-2 cloves garlic, chopped
-1 teaspoon ground cumin
-1 teaspoon paprika
-1 teaspoon ground ginger
-1/2 teaspoon ground cinnamon
-1/4 teaspoon cayenne pepper
-1 can diced tomatoes, undrained
-1 tablespoon tomato paste
-4 cups (1 litre) chicken or vegetable broth
-1/2 cup (120 ml) freshly squeezed lemon juice
-1/4 cup (60 ml) chopped fresh coriander
Instructions:
1. In a large pot, sauté onions and garlic in olive oil over medium heat until softened.
3. Add the spices (cumin, paprika, ground ginger, cinnamon, and cayenne pepper) and cook for 1 minute.
4. Turn up the heat and add chickpeas, diced tomatoes, tomato sauce, and chicken or vegetable broth.
5. Bring to a boil and simmer for 30 minutes.
6. Add the lemon juice and coriander and cook for 5 minutes.
7. Serve with a dollop of yoghurt or sour cream and a slice of bread on the side.
There are many ways to make this dish extra special. Try adding a dollop of harissa on top for an extra spicy kick. You could also garnish with crumbled feta cheese or chopped fresh mint leaves. Try serving this soup over a bed of rice or quinoa for a heartier meal.
