Mixed Chocolate Cake Truffles

These are so good you won't be able to stop at one.

I've posted a few truffles and ball recipes that make wonderful gifts 🎁 and this one is definitely worth adding.

5 minutes cooking time
Makes 30 in total

Ingredients​

  • 300 g Madeira cake crumbed
  • 2 tbs any berry jam
  • 1/4 cup cream
  • 60 g unsalted butter melted
  • 2 cup milk chocolate melted
  • 2 tbs rum *to taste ( or coffee)
  • 1 cup white chocolate melted
  • 1 cup milk chocolate melted
  • 1 cup dark chocolate melted


Method​

  • Step 1
    Line a baking tray with baking paper or foil.
  • Step 2
    Mix together the cake crumbs, jam, cream, butter, melted chocolate and rum, stirring until moistened.
  • Step 3
    Refrigerate for 20-30 minutes, or until firm. Roll teaspoons of the mixture into balls and place on the tray.
  • Step 4
    Refrigerate for 10-15 minutes, or until firm.
  • Step 5
    Line 3 trays with baking paper or foil.
  • Step 6
    Melt the white chocolate while stirring over hot water. Repeat with the milk and dark chocolate. Let cool for 1 minute before dipping truffles in.
  • Step 7
    Using a fork, dip the truffles in the different chocolates, tapping gently on side of the bowl to drain away the excess.
  • Step 8
    Dip a third of the truffles in the white chocolate, a third in the milk and the rest in the dark.
  • Step 9
    Leave on baking trays to set.
  • Store in an airtight container in fridge

Recipe Notes

Make sure the chocolate is not too hot, or the truffles will melt and the chocolate will discolour.
Use can use any jam of choice not just berry jam

If you'd like to make your truffles look as good as they taste, then here are a few tips to help you out:

  • For a professional touch, try coating your truffles and balls in melted chocolate.
  • To make a number of different looking truffles and balls, try rolling the finished sweets in crushed nuts, toasted and untoasted coconut, chocolate sprinkles, crushed chocolate bars or even jelly crystals.
  • Line a shallow box with small paper confectionary cases and place a sweet inside each paper case.
  • Package your sweets up in cellophane bags and tie them with a ribbon for an impressive gift that only takes moments to put together.
