Mediterranean Fusion Nachos

This morning we brought you a gorgeous recipe for slow-cooked Mediterranean lamb. But what do I do with the leftovers, you may ask? Well, I have just the recipe for you!
Introducing, Mediterranean fusion nachos! This recipe takes less than 10 minutes to put together because you already did all the hard work and preparation and now you get to use those leftovers in a tasty way.

Ingredients
Slow-cooked Mediterranean lamb
A packet of tortilla chips
120g (1 1/2 cups) grated cheese
100g feta, crumbled
1 fresh tomato, finely chopped
Tzatziki, to serve
Fresh mint leaves, to serve
Method
Step 1
Place the lamb in a microwave-safe bowl. Pour over 185ml (3/4 cup) water. Microwave for 4 minutes or until warm. Stir. Use two forks to shred the lamb.
Step 2
Preheat oven to grill. Place the pita in the base of a shallow heatproof dish. Top with the lamb and cheeses. Place under the grill for 4 minutes or until the cheese is melted and golden.
Step 3
Serve scattered with tomato, dolloped with tzatziki and sprinkled with mint leaves.
