Lemon Delicious Pudding

If you like cake and you like lemon then you will love this.
Hey it's Sunday and we all deserve something sweet n nice.

Serves 4 to 6

Prep time 30 min
Cooking time 45 min

Preheat oven 160 C or 140 C Fan-forced
Grease a round baking dish or pie dish around 20 cm

Ingredients
50 gram butter, at room temperature

3/4 cup caster sugar

3 eggs separated

1/3 cup fresh lemon juice

2 teaspoons lemon rind, finely grated

1/2 cup self raising flour

1 cup milk

Icing sugar for dusting.

Method

1. Using an electric mixer, beat butter and 1/2 cup of the sugar until lightly and fluffy.

2. Add egg yolks one at a time and beat well after each addition. Add lemon juice and lemon rind and mix until combined, sift flour on top of mixture and add milk. Using a metal spoon, gently folk to combine.

3. In a seperate bowl, beat egg whites until soft peaks form, add the remaining sugar ( 1/4 cup) and beat until thick n glossy.

4. Gently fold egg whites into lemon mixture and mix until combined.
Spoon mixture into prepared pan . Place dish into a baking dish and pour boiling water in until it comes half way up the sides of pie dish

5. Bake in oven for 45 minutes until Pudding has risen and top is golden.
Remove from oven and stand for 5 minbefore moving dish from water.
Sift icing sugar on top

Serve by it self or with a dollop of cream or custard

My neighbour gave me more lemons, plus her lady finger bananas were ripe, so more bananas as well.
This recipe is a good one to use up lemons.
I will bake my lemon and blueberry cake today.

I have too many banana's too, so made more banana muffins and a delicious banana cake which I found in my Donna Hay cook book.

I live in a suburb in Sydney with 3 lemon trees and I have never seen so many beautiful juicy lemons , I've given bags away and still have 2 huge bags in my garage fridge and then there is the banana's omg 😲

I can imagine. My neighbour's lemon trees are sagging with them. Sometimes she puts them out the front and people take them.
Are they cavendish bananas? I don't think Qld are allowed to grow them in back yards.

I'm not sure I will have to ask hubby. There has been banana's non stop for more than 6 months. And huge heavy hands of them. Everyone we have given them to say afterwards when they buy banana's they ones they buy taste very plain

It is, I have had so many lemons on my trees and even after giving away bags full and freezing the juice I still have so many . I have been cooking everything lemon 🍋
Tell me about it I’ve got five bags of lemons in my freezer good thing is they freeze for up to 4 months or more. Everything I eat at the moment has lemon on it or lemon juice every morning. Reckon I’ll turn into one 😹😹

I use so many lemons , I still have some on my trees but may need to buy some soon
