Lemon and thyme roasted chicken

This recipe is a delicious and easy way to cook a whole chicken. The chicken is marinated in a mixture of lemon juice, thyme, and garlic and then roasted in the oven. This dish is usually served with a side of roasted veggies.
Ingredients:
1 whole chicken (or, if you’re looking to make something a bit smaller just marinate two chicken breasts and halve all the below ingredients)
1/2 cup lemon juice
1 tablespoon thyme leaves
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
Half a butternut pumpkin
2 zucchini
1 sweet potato
Method:
1. Preheat the oven to 180 degrees Celsius.
2. In a bowl, mix together lemon juice, olive oil, thyme, garlic, salt, and pepper.
3. Place the chicken in the bowl and coat with the marinade.
4. While you’re waiting for the chicken to marinate, chop up the pumpkin, sweet potato and zucchini. Pop them on a baking tray, dribble some olive oil, and sprinkle some salt and pepper on the veggies.
5. Place the veggies in the oven.
6. Grab the chicken out of the marinade and place the chicken in a roasting pan and roast for 1 hour, or until the chicken is cooked through.
6. Serve with a side of vegetables or potatoes.
