We understand how sometimes, after a long day, you don’t have the energy to come up with something tasty and creative for dinner. That’s why we love this ‘lazy’ Garlic Chicken with Butter Noodles recipe – it only takes about 30 minutes and tastes like pure, delicious magic. So break out the stirring spoon, sharpen your knife, and prepare to have your taste buds tantalised.
Here are the ingredients you need:
1. 200g of dried spaghetti
2. Two tsp of olive oil
3. 600g of chicken thighs
4. 80g of butter, chopped
5. Four garlic cloves, finely chopped
6. 250g of packet zucchini noodles
7. A pinch of dried chilli flakes, plus extra, to serve (optional)
8. 1/3 cup if chopped fresh parsley leaves, plus extra, to serve (optional)
9. Finely shredded parmesan, to serve (optional)
Start by boiling a large pot of water for the spaghetti. Follow the packet's instructions or cook until the pasta is al dente. Then, drain the pasta, but leave about a quarter cup of water from the pot to use later.
Take a large non-stick frying pan and heat some oil over high heat. Season the chicken thighs with some salt and pepper before cooking them for around six minutes per side or until they're cooked through. Set them aside on a plate to cool, and then coarsely chop them up.
Reduce the heat to low and add the butter and garlic to the pan. Wait until the butter begins to foam and the garlic is aromatic before adding the zucchini noodles and the chilli (if you want).
Return the pasta to the saucepan with the chicken and zucchini combination, as well as the parsley and the reserved pasta water. Mix everything together, season with salt and pepper, and toss everything with a pair of tongs. Divide the mixture among several serving bowls, spooning in some of the liquid from the pan for added flavour. Finally, top the dish with extra parsley, chilli and parmesan cheese.
What sets this dinner recipe apart from the rest of the crowd is its sheer simplicity. You can whip it up easily with only a few ingredients, and it's incredibly delicious too. In addition, you can't beat the price– perfect for an effortless dinner on a budget. So why not give it a try and enjoy a delicious dinner that fits within your weekly savings?
