Lamb Souvlaki

I used to make my own souvlaki from scratch until I started buying premade ones which just needed cooking. But I found the prices sky rocketed $150 for 48 and quality went down
So I have again started making my own.
I use lamb backstrap which I buy from Coles. I paid $30 which made 16 sticks.

Serve on a plate with salad and chips or potatoes.
Or with Pita bread and salad
My family always has tzatziki with it. I have added easy tzatziki recipes before or just buy store bought. I buy the brands Chris or Obella.
So I have again started making my own.

Ingredients
- 700g lamb backstrap , or and cuts of lean lamb . Cut into 2.5cm/1” cubes
- 1 tsp salt ( I use sea salt)
- 1/2 tsp black pepper
- 1 tbsp extra virgin olive oil
- 15 skewers , wooden or bamboo
LAMB SOUVLAKI MARINADE:
- 3 garlic cloves , finely minced
- juice of 3 lemons ( you need around 1/4 cup
- 2 tsp dried oregano
- 3 tbsp extra virgin olive oil
- 1 tsp salt ( I use sea salt)
Instructions
MARINATE LAMB:
- Mix marinade ingredients in a bowl. Add lamb and toss to coat.
- Marinate in fridge for at least 3 hours , best overnight
Assemble
- Remove meat from marinade and thread 4 pieces on each skewers
- Sprinkle the meat with the salt and pepper. (This really makes a difference to the finished dish, better than just in the marinade).
- Cook – Heat 1 tbsp olive oil in a large non-stick pan over high heat. Cook half the skewers for 3 minutes, turn then cook the other side for 3 minutes uuntil cooked ( becareful not to over cook)
- Transfer to a plate and loosely cover with foil to keep warm while you cook the remaining skewers.
Serve on a plate with salad and chips or potatoes.
