Kung Pao Noodles With Prawns

Kung pao noodles are a dish originating from the Sichuan province of China. The dish is traditionally made with stir-fried noodles, vegetables, and protein (usually chicken, beef, or prawns). Kung Pao noodles is typically made with a spicy sauce, though the level of spice can vary depending on personal preference.

Ingredients:

-1/2 kg prawns, peeled and deveined
-1/2 kg noodles (or pasta)
-1/4 cup vegetable oil
-1/4 cup soy sauce
-1/4 cup rice vinegar
-1 tablespoon sugar
-2 cloves garlic, minced
-1 teaspoon ginger, minced
-1/2 cup peanuts
-1/4 cup shallots, thinly sliced
-1 tablespoon sweet chilli sauce
-2 capsicums, chopped
-2 tablespoon cornstarch
-1/3 cup chicken broth
-2 tablespoon sriracha (optional)
-Salt and pepper to season
-Freshly chopped coriander, for garnish



Instructions:

1. Bring a large pot of salted water to boil and cook the spaghetti according to package directions.

2. While the pasta is cooking, prepare the shrimp by heating sesame oil in a large skillet over medium heat. Add the shallots and ginger and cook until fragrant.

3. Then, add the shrimp and season with salt and pepper. Cook until opaque, then remove from the skillet.

4. To the same skillet, add the capsicums and cook until soft. Then, add the garlic and cook until fragrant. Add the cornstarch and stir to combine. Pour in the soy sauce, chicken broth, sweet chilli sauce, Sriracha, and rice vinegar and whisk until combined. Simmer for 1-2 minutes until reduced slightly.

5. Toss cooked noodles, shrimp, and peanuts and stir to combine. Cook for 1-2 minutes, or until sauce is evenly distributed. Garnish with coriander before serving.

To make this dish extra special, you could top it with a fried egg or add some other vegetables like broccoli.
