2 large chicken breasts, sliced horizontally,
1 1/2 teaspoons paprika
1 teaspoon dried oregano (or thyme, parsley, rosemary)

1/4 teaspoon chilli flakes, or to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon instant chicken stock
1 teaspoon chilli powder, optional
1 tablespoon olive oil (Optional)
3 tablespoons butter
2 cloves garlic, minced or finely chopped
2 teaspoons fresh chopped parsley

Instructions:

1. Preheat oven to 180°C.

2. Using a meat mallet or rolling pin, pound each chicken breast to 0.8-inch (2cm) thickness at the thickest part.

3. In a small bowl, combine paprika, instant chicken stock, oregano, salt, garlic powder, onion powder, chilli flakes, and chilli powder (if using).

4. Line a baking sheet with aluminium foil (or parchment/baking paper). Arrange the chicken breasts on the pan. Drizzle with olive oil and rub seasoning all over to coat evenly.

5. Bake chicken breasts in the oven for 15-18 minutes.

6. While baking the chicken, melt butter in a small skillet. Sauté garlic until about half a minute, and remove the skillet from heat. Stir in the chopped parsley, then pour the garlic butter mixture into the baking juices on the baking sheet, thoroughly mixing to combine all the flavours.

7. Transfer cooked chicken to serving plates, drizzle pan juices over the baked chicken breasts and garnish with freshly chopped parsley. Serve with a side of salad or roasted vegetables for a complete meal. Enjoy!
