Jacket Potatoes with Different Fillings

My favourite all time food has to be The humble potato.
If I was told I could only choose one food product, then potato would win.

I want to share with you how you can turn it into a complete and easy meal

How to make a jacket potato šŸ„” šŸ˜

Preheat oven to 200 deg c or 180 deg fan forced

4 x potatoes I use medium to large ones

1. Scrub potatoes then dry with paper towel.

2. Using a fork pierce the potato all over.

3 . Place directly on oven rack and cook for 50 minutes or until tender

4. Cut across in tops of potatoes, then push base to open..
Transfer to serving plates. Fill with chosen topping.

TOPPINGS

1. Ham n pineapple


In a bowl Combine 1/2 cup mozzarella cheese, 2 tablespoons of chopped canned pineapple and 2 finely chopped ham slices and 1 finely chopped capsicum .
Season with salt n pepper and fill potatoes.
Place in grill until cheese has melted
Serve

2. Crisp bacon and Guacamole

In a frypan cook over high heat for 2 minutes 1 finely chopped bacon rasher rind removed stirring continuously.
Stir in one sliced shallot.
Mash one Avacado, 2 tablespoons of lemon juice and 1 tablespoon of finely chopped coriander together in a bowl
Fill potatoes with Avacado mixture then sprinkle the bacon mixture.

3. Tuna Mayo

Drain and flake ( pull apart) 185g tin of tuna in springwater.
Combine tuna with 2 tablespoons of mayonnaise, 4 finely chopped pickled onions and 2 finely chopped taof flat leaf parsley. Season with salt n pepper
Fill potatoes with tuna and mayonnaise mixture

4 . Creamy chicken n mayonnaise

Combine 2 cups of shredded cooked chicken, 1/2 cup of mayonnaise and 2 teaspoons of chopped chives.
Season with salt n pepper
Fill potatoes with mixture

5. Curry chicken

Combine 1/2 a small coarsely chopped cooked chicken, 1/2 cup Greek plain yoghurt , 1 teaspoon mild curry powder and 2 teaspoons of white vinegar in a bowl.
Coarsely grated 1 carrot.
Fill potatoes with carrot then top with chicken mixture.
Sprinkle with 1 teaspoon of chopped flat parsley

When I want to cook spuds in their jackets, I do so in the microwave. Pierce the jacket several times, cook for 4 minutes , turn them over and cook for another 3 minutes.

I do cook my potatoes in the microwave. They only take 7 to 8 minutes.

Down here in Tasmania jacket potatoes filled with what you want are a big thing there jacket potato shops everywhere and I love them

Thankyou again for another yummy recipe Suzanne rose. For me, the 5 different fillings you have shown equate to 5 different meals or use 2 together each time & still have as many meals. Can't wait to give these a try.
