Italian grand-mum’s eggplant parmigiana recipe goes viral on social media — “This is so mouthwatering!”

An Italian grand-mum has made the rounds on social media after she revealed her recipe for an authentic homemade eggplant parmigiana.

Sydney TikTok user Maddie filmed her beloved Nonna Fina preparing the classic Italian dish, grabbing the attention of people from across the globe.

Nonna Fina revealed that all the ingredients you need to make this delicious dish are eggs, parmesan cheese, plain flour, eggplants, sunflower oil, and tomato and basil sauce.

In the clip, Nonna combines the eggs and cheese in a medium-sized bowl before seasoning them with some salt and pepper to taste.

Next, she prepares the eggplants by slicing off the tops and peeling their skin off.

She then places the vegetables in a bowl of water and sets it aside.

Nonna Fina says that it is important to soak them in water as this method ensures that the flesh of the eggplants do not turn brown.

The grand-mum then mixes flour with salt and pepper in a separate bowl.

Once the flour is prepared, Nonna takes the eggplants out of the water and dries them before cutting them into medium slices.

She then seasons the slices with salt and pepper before rolling them in the flour and dunking them in a beaten egg — which she prepares earlier— similar to that of the chicken schnitzel preparation.

The eggplant slices are then fried in a pan of hot sunflower oil until they turn golden brown and are set aside.

In a deep baking tray, the grand-mum pours a layer of tomato and basil sauce at the base before layering it with eggplant slices and cheese, repeating this process until the dish is full.

Nonna Fina then bakes the dish for 30 minutes at 200 degrees Celsius before serving it with a sprinkle of cheese on top.

The video became an instant hit among TikTok users, amassing more than 178,000 views and over 10,000 likes.

Ingredients:
  • 5 eggs
  • 2 eggplants
  • Salt and pepper
  • Tomato and basil sauce
  • 4 tbsp plain flour
  • Parmesan cheese
  • Sunflower oil

Method:
  1. Carefully crack the eggs in a bowl and whisk in salt and pepper and three tablespoons of parmesan cheese
  2. Chop off the tops of the eggplants and peel the skin off. Then, put aside in a bowl to ensure the vegetables don't brown
  3. In another bowl, add four the plain flour and salt and pepper
  4. Dry the eggplants and cut into slices of medium thickness
  5. Add salt and pepper
  6. Dip the eggplant slices into the flour, then the egg mixture and fry in hot sunflower oil
  7. Turn over each slice once golden then remove from the oil
  8. Add the tomato and basil sauce to a tray then place a layer of eggplant on top, then parmesan cheese
  9. Add more sauce and repeat
  10. Cover with foil and bake at 200 degrees Celsius for 30 minutes
  11. Add more cheese on top and serve
