Crispy Fetta Fried Eggs with Nduja (or Pesto)
Ingredients (Serves one):
- 1 egg
- 1 flour tortilla or slice of toasted sourdough
- 1 teaspoon of Nduja (or pesto)
- 70 grams of fetta, crumbled
- Half an avocado, sliced
- Wedge of lemon
Method:
- In a frying pan, gently fry the Nduja for 2 minutes
- Add the crumbled fetta in a circle and leave a space in the middle for the egg
Tip
If using pesto instead, add the pesto after you crumble the fetta then do the same process.
- Crack the egg right in the space in the middle and place the lid on the pan
- Let it fry on medium heat for around 2 minutes until the egg is cooked and the fetta is crispy
Tip
To make sure that the fetta gets nice and crispy, remove the lid to let any extra moisture evaporate.
- With the help of a spatula, gently slide the egg and its crispy ring onto a wrap or a hunky slice of toasted sourdough
- Add a healthy serving of sliced avocado, a little spurt of lemon juice, and some fresh herbs or spicy chilli for a zingy wake-up call.
